Got this recipe from a friend (thanks Kristi!) and I just tried it out! It got the leg-up-on-the-table approval from the little man:-)
6 tablespoons coco milk ( full fat)
1/4 cup unsweetened shredded coconut
1/4 tsp vanilla
1/2 tsp cinnamon
2tbs nut butter (almond or cashew butter are great or try a mix!)
Mash everything together in a small wide mouth mason jar or bowl and toss it in the fridge so it is ready to go in the morning.
Top with some pecans for crunch and some berries if you have them.
Heat it up or eat it cold, both ways are delicious!
